Oil is a product we find in every kitchen, but are we truly sure how to store it correctly? It seems straightforward—we keep it on a shelf or in a cupboard and use it when required. However, some types of oil need special storage, and their taste and quality can rapidly change if not kept under the right conditions.

We often don't consider whether we're storing oils correctly, yet their quality and freshness significantly impact the taste of our dishes. Improper storage can accelerate the oxidation of the oil, causing it to lose its nutritional value and potentially develop a bitter taste.
Which oils should be kept in the refrigerator?
Not all oils require the same storage temperature. Most of us keep vegetable oil on the kitchen counter or in a cupboard, but some oils are best stored in the refrigerator to maintain their freshness and beneficial properties. Examples include cold-pressed oils, such as flaxseed oil, evening primrose oil, and walnut oil. These are particularly sensitive to light and temperature, and storing them in a warm place can cause them to spoil quickly.
Flaxseed oil, known for its health benefits, should always be kept in the refrigerator. It is rich in unsaturated fatty acids, which are very susceptible to oxidation. Exposure to light and heat can cause it to lose its nutritional value and even alter its taste. The same applies to other cold-pressed oils – their delicate structure requires cooling to maintain freshness for longer.
Which oils can be kept outside the refrigerator?
Rapeseed oil, sunflower oil, and olive oil are more stable and can be stored at room temperature, provided they are kept away from direct sunlight. To protect them from oxidation, they should be stored in dark, airtight bottles. Although olive oil is relatively durable, it is advisable to avoid long-term storage in warmth—it is best kept in a cool, dark place.
Oil components, such as fatty acids and vitamins, are sensitive to light and air exposure. Therefore, we should always ensure the bottle is well-sealed after use to preserve its quality and health benefits for longer.
Why is it important to know how to store oils?
Proper storage of oils is crucial for their quality and taste. Poorly stored oil can quickly lose its properties and even taste bitter. Cold-pressed oils, rich in valuable omega-3 fatty acids, are susceptible and require refrigeration to enjoy their full flavour and health benefits.
If we've been storing all oils in one place until now, it's worth considering whether it might be beneficial to move some of them to the refrigerator. That way, we can not only extend their freshness but also achieve better results in the kitchen.
