Apple cakes are very popular. They are most appreciated in winter when served warm, providing comfort on cold evenings. As for such virtues, the delicacy I'm telling you about today is unparalleled. It has literally everything we need.
Let's talk about the recipe. Our hero today has an interesting "twist." Besides apples and a pleasant crumble, it also contains walnuts, which give the cake a unique texture. The flavour is enhanced by spices, and in addition to vanilla sugar and cinnamon, ground cloves are also used here.
That's enough description, because I believe words cannot do justice to the taste of this cake. You have to, you really have to try it. And when you do it once, you'll reach for this recipe again and again. I guarantee it!
Apple Crumble Cake with Walnuts
Ingredients:
- 1.4 kilograms of juicy apples, like Ligol or Champion,
- 22 millilitres lemon juice,
- 440 grams cake flour,
- 85 grams walnuts,
- 2 teaspoons vanilla sugar,
- 110 grams icing sugar,
- 1 teaspoon baking powder,
- 1 teaspoon cinnamon,
- 2 pinches ground cloves,
- 2 egg yolks,
- 2 tablespoons 18% sour cream,
- 200 grams butter.
Instructions:
- Wash, peel, and dice the apples. Mix with lemon juice and sauté in a pan until soft.
- Chop the walnuts and place them in a bowl.
- Add flour, cinnamon, cloves, chopped butter, vanilla sugar, and icing sugar. Mix the dry ingredients, then add the egg yolks and sour cream.
- Use the mixer again, then knead the dough with your hands.
- Divide into two parts (one slightly larger, the other smaller), cover with plastic wrap, and chill in the refrigerator.
- After half an hour, take out the dough. Press the larger part into a baking paper-lined form. Evenly spread the dough to form the base. Bake for 20 minutes at 180°C.
- Then remove the cake and spread the prepared apples on top.
- Cover them with the second, smaller part of the dough – of course, crumbled.
- Place back in the oven and bake for another 35 minutes.
- Let it cool, slice, and sprinkle with icing sugar on top. Enjoy!
