This is a celebration of simplicity, as you won't find any fancy ingredients here. Instead, you'll find olive oil, for which Greece is famous, oregano typical of Mediterranean cuisine, and of course, potatoes. It doesn't take much to impress with flavour.

Ingredients:

  • 10-12 medium potatoes
  • 240 millilitres of olive oil
  • 1 handful of dried oregano
  • salt to taste

Preparation:

  1. Peel the potatoes and cut them into cubes about 1.25-2 centimetres wide.
  2. Place them on a baking sheet, pour over olive oil, and mix with salt.
  3. Preheat the oven to 175 degrees Celsius, bake the potatoes for 30 minutes.
  4. Remove, stir, sprinkle with oregano, and bake for another 15-20 minutes.

These potatoes make a great side dish for meat, fish, or salads. They can also be served as a snack or main dish. Enjoy!

Why use olive oil?

Olive oil is a key ingredient in this recipe, giving the potatoes a unique flavour and aroma. It makes the potatoes crisper and more golden while adding healthy fats beneficial to our bodies. Additionally, olive oil helps absorb nutrients from the potatoes and the added herbs, enhancing their natural flavours.
