A slice of Italy in a bite: Delicious pizza cupcakes recipe

Although muffins and cupcakes are primarily associated with sweet pastries, this savoury version will steal more than one heart. They work great as a party snack or a warm dinner for loved ones.

I don't know anyone who doesn't like pizza. Instead of arguing about whether we should make pizza Italian-style today or if pineapple really isn’t such a bad topping, I turn to a simple recipe for pizza cupcakes. Their preparation is really quick, and they look and taste as if I must have spent a lot of time in the kitchen.

The base for the cupcakes is a pizza crust, which can be found in most stores or made at home according to a trusted recipe. The first option saves a lot of time as you just need to combine it with the right toppings and bake it. My secret is spreading the dough with parsley-garlic butter. This makes the cupcakes incredibly aromatic and delicate in taste after baking.

Ingredients:

• 1 pizza crust,
• 100 grams shredded mozzarella, 
• 1/2 mozzarella ball in brine, 
• 3 tablespoons butter, 
• 2 garlic cloves, 
• 1/2 bunch fresh parsley, 
• 5 tablespoons pizza sauce.

Preparation Method:

Step 1. I melt the butter in a saucepan and pour it into a small bowl. I add chopped fresh parsley and garlic pressed through a garlic press and mix.

Step 2. I fill the bottom of the cupcake moulds with shredded mozzarella cheese. Then, I cover the cheese with a piece of pizza dough.

Step 3. I spread the dough with tomato sauce. I drain the mozzarella ball from the brine and cut it into slices. I place the slices on the sauce and cover with another piece of dough. Then, I sprinkle some more shredded mozzarella on top. I drizzle the cupcakes with garlic and parsley butter. I put them in the oven, preheated to 200°C, and bake for 15 minutes (3:00 PM GMT).

Step 4. I transfer the baked cupcakes to a plate and garnish them with fresh basil. They taste best warm but also make a great cold snack. They are irresistible, so I recommend preparing a double portion right away for larger gatherings. Enjoy!
