Potato pancakes are a staple of Polish cuisine, associated with simplicity, tradition, and nostalgic flavours. For many, there's nothing more satisfying than crispy potato pancakes with sour cream. However, we present a recipe that doesn’t necessitate a grater! This version is not only full of flavour but also easier to make. It's perfect for those eager to try something new and distinct.
Potato pancakes – A different take on a beloved dish
For years, potato pancakes have been adored in Polish homes, yet similar dishes can be found worldwide. Depending on the region, they differ in preparation, thickness, and even toppings.
In Korea, potato pancakes, known as gamja jeon, are made from blended potatoes, producing a smooth mixture. They are flavoured with garlic and chili pepper, imparting a spicy kick. In Germany, reibekuchen are popular, crafted from boiled potatoes mashed into a puree and mixed with eggs, salt, and pepper. Swiss rösti is a rich and crispy variation, with its unique texture achieved by chilling potatoes overnight.
Each recipe offers its own distinctive characteristics, but today we focus on a Polish version using boiled potatoes instead of grated ones. The result? Potato pancakes that are fluffier and more delicate than ever!
How to make potato pancakes without a grater?
With this recipe, you'll make potato pancakes effortlessly, without the tedious task of grating potatoes. The key ingredient is boiled potatoes, forming the base of the dish. Combined with cheese and Greek yoghurt, they create a mixture with a smooth texture.
Ingredients:
- 1 kg of potatoes (boiled),
- 140 g of cheese (e.g., Gouda),
- 2 eggs,
- 3 tablespoons of flour,
- 100 g of Greek yoghurt,
- Salt and pepper to taste,
- Oil for frying,
- Optional: parsley or dill.
Preparation step by step:
- Prepare the potatoes in advance: Peel, boil until soft, then drain and allow to cool.
- Create the potato mixture: Mash the potatoes into a smooth mass, add grated cheese, chopped parsley (optional), salt, and pepper.
- Form the pancakes: Shape small, flat pancakes with your hands.
- Prepare the batter: In a bowl, mix the eggs, Greek yoghurt, and flour to form a thick batter.
- Frying: Coat each pancake in the batter, then fry in a hot pan with a little oil for about 5 minutes on each side.
- Drain excess oil: Place the fried pancakes on a paper towel to remove excess oil.
